Salmon Warm Grain Bowls

  • No: --> Still...keep reading. There are tons of ways you can substitute ingredients in this dish to make it to your liking.


First up, what the heck is a Warm Grain Bowl? Well, these are called a few different things depending on where you look. I've heard Buddha Bowls, Power Bowls, Warm Bowls, Grain Bowls, and the list goes on. Basically, these can be made a bunch of different ways based on what you like. That's the beauty of it! The main recommendation is this: Pick a base, pick a protein, and pick as many super-foods as possible to fill it out.

This recipe is inspired by one of my favorite quick service restaurants in Chicago:


Sweetgreen! It is a healthier option for something fast if you're ever looking for something in that realm. While I'll admit that, yes, it is a bit pricey, I promise you'll feel like a million bucks after. I discovered this gem because it is a big hit in the advertising industry. My favorite menu items are the Chicken Pesto Parm Warm Bowl and the Hummus Tahina Salad.


I created the Salmon Warm Grain Bowl by combining my favorite elements of these two Sweetgreen classics.


Here is where you can get creative: I incorporate my Pesto with Salmon, but similar to the Sweetgreen dish, Chicken is a great sub. Falafel would also be an amazing sub if you're looking to go meat-free. My base was a combination of a Brown Rice/Quinoa Blend and Spinach. This can be altered as well based on your favorite base combinations! Hint: try Kale, Couscous, Mixed Greens, Farro, Lentils.


The Salmon I used for this is from Costco (I fricken' love Costco):

  • Kirkland Signature Salmon Milano with Basil Pesto Butter

In their meat section, you can grab a HUGE tray for about $20. While this is a bit more than I like to spend for one kind of meat at a time, I cannot get over how good this is. The Salmon is topped with three Pesto Butter balls and Basil. The tray it comes in can be placed directly in the oven with easy to follow instructions on the packaging.







Also at Costco, we grabbed our Hummus and Tzatziki Sauce:

  • Hannah's Greek Yogurt Tzatziki Dip

  • Kirkland Signature Organic Hummus Cups


Both of these items are staples in our house for a few reasons...


The first being these Warm Grain Bowls, duh!


Also, the Tzatziki dip is an amazing sub for your classic "chip dips" like Dean's French Onion Dip, Salsa or Queso. You can pretty much dip anything into it and it tastes good. Plus, it's Greek Yogurt based versus anything super fatty or processed. AND for some of my family members and friends who are Gluten Free, this will knock your socks off (BONUS POINTS)!! Try it with chips, crackers, carrots, cucumbers, bell peppers. Let me know what else you come up with, and I'll add to the list!


The Hummus comes in a box of 20 individually packaged cups. They are organic, so tasty and 170 calories per pack. I throw one of these in my lunch almost every day and eat with veggies and crackers.



I am giving this an LP Wellness Rating of 9 because it is packed with all the right super foods and so yummy that you can eat it 3 nights in a row without getting sick of it! This meal is an all-around win.
