Are you ever just in the mood for Steak so bad, but you want to feel somewhat healthy?
I feel this way a lot more than I'd like to admit. Generally speaking, I try to stick to Chicken, Turkey and Fish when it comes to meat selection, but sometimes when the sun is shining and the grill needs to be fired up, I can't help but crave a juicy Steak for dinner.

My solve: Steak Salad
Or as I like to call it: Moo & Blue Salad
This dinner is super simple and quick to whip up! Depending on the time of year, you can make this without a grill as well (I am a firm believer in the George Foreman indoor grill)! The best part of throwing your Steak on this salad is that you won't be sacrificing flavor, in fat, just the opposite. This salad is packed full of delicious bites from the Roasted Corn to the creamy Blue Cheese. MMM! MY mouth is watering just thinking about it!

You can sub most of the ingredients here based on your preference. Let's say you feel like swapping the Blue Cheese for Goat Cheese or the Tomato for Avocado? Honestly, it is a 10/10, and you can't go too wrong. I highly recommend roasting the Corn, however, as this really draws out the super sweet and smoky flavors.
I am giving this Moo & Blue an LP Wellness Rating of an 8. With veggies galore and so much flavor, it's a knockout. If you aren't a red meat eater, try it with some blackened or grilled Chicken and I'm sure it'll still knock your socks off!
