Power Breakfast Bowls

When I think of a wholesome & hearty morning meal, I think of the classic breakfast trifecta: meat, potatoes, and eggs. These three staples give you the energy and nutrition needed to take on the day and can be mixed and matched so many different ways.
Since I've started tracking my meals and creating new recipes, I discovered that one of my FAVORITE things to do is create new and fun Friday Breakfasts. I gather what we have in the fridge from the week of cooking at home and eating out and come up with new and different creations each time. It is a perfect start to my weekend. I'm not even exaggerating on this...it puts me in a good mood. GOOD MOOD FOOD people!! Something we could use more of. This may come up in a few recipes so might as well give it a name:

Not only is it fun, but it's a great way to be conscious of your waste. We have been able to clear out the fridge almost entirely week after week by adding this one meal into our routine. And hey, it helps that I work from home on Fridays, I'll admit. But this can be done on Saturday or Sunday, too! Whatever works best for you.
I'll be sharing more of these Power Breakfast Bowls as we go on, but let me know what you think of this Steak Fajita version! We really enjoyed this one, but did find that steak is not as good the second time around. You're like "yeah, news flash LP!" Understandable, but still worthy enough to eat in a Power Bowl versus wasting it.
