One Pot Creamy Tortellini and Chicken Sausage

Is your mouth watering?


This is one of those meals that will boost your mood, keep you warm, and give you a hug in a bowl. @Chicagoans-- winter is coming. Need I say more?


Disclaimer** This meal is on the higher side for calories and carbs, so if you're not interested...stop reading because it is SO GOOD.


I grew up in a big family and that often meant pasta for parties and for dinner as it is easy to make in bulk. I have such a soft (or more like an al dente) spot in my heart for it. It feels like home and the holidays and all things comfortable. It is a staple in the comfort food category, am I right? But I especially have a love for tortellini. This is something my mom would whip up when my brother and I were super busy playing sports growing up. We would eat it before, during and after practice depending on the day. It was like carbo loading, right Mom? Good for us :)


Now that I'm an adult, living on my own, and have no reason to have this many carbs like ever, makes it more of an indulgence than anything. But there is a time and place for this kind of thing. And if you're in this time or at this place, please... read on...



There are so many ways you can change this up. First and foremost, you do not need a Dutch Oven to create this dish. Marinara instead of Sun-Dried. Mushrooms instead of Asparagus. Chicken instead of Chicken Sausage. Italian Sausage if that's your thing!! Now I'm dreaming of Vodka Sauce myself...


I am giving this an LP Wellness Rating of 5 as I know pasta is not typically high on most lists for clean eating. However, this will warm your soul. My advice here would be to make it few and far between, but definitely should be a go-to recipe when you need a pick-me-up.
