Do I mean Gyros?? Well, kinda. Ohhh...Chicken Gyros? Well, kinda.
Let me explain: I have always had a hard time with meat. I know some of you can agree that it can be a scary thing, especially if you don't prepare it yourself. So instead of gyro meat here, I used chicken breast for this recipe. Plain and simple white meat, healthy and doesn't freak me out. You call me basic & you can call these chicken pitas! (Insert the joke about calling me anything but late for dinner).
I started trying actual gyros (yes, with lamb) about a year ago and realized how freaking amazing they are. So those of you like me who are weary of the meats-trust me on this one. They are GOOD. However, most of us don't have giant spits lying around nor do we have the time to be rotisserizing (yep, we're calling it that) our own meat for hours on end.
My favorite part about this recipe is the homemade Tzatziki Sauce. It is literally so easy and so yummy. Pro Tip: If you have some left over, use it as a dip with raw veggies or crackers. You'll thank me later!!
Cue in my take on Mediterranean Chicken Pitas:

A fun tid-bit about the first time I made this: My man-friend/roommate, Mike, became a FETA MONSTER! He had never truly dabbled with the beloved cheese before this, and now he is unstoppable whenever it makes an appearance in our fridge.
I am giving Mediterranean Chicken Pitas an LP Wellness Rating of 7. It's light yet filling and deserves bonus points for a homemade sauce.
I would love to know how it goes if you try this! Leave a comment or send me a message!
