LP's Harvest Bowls

Can you guys believe it's the middle of November already? I swear July was yesterday. AND if you're in the Midwest, we have SNOW!!! Winter is truly upon us.
Anyway, I really wanted to call this one LP's Fall Harvest Bowls because that is what they are, but I would honestly eat this on the hottest day of Summer. Holy Healthy Food Heaven.
So many times I find myself eating a healthy, home-cooked meal where I'm just like "well...this isn't a Pepperoni Pizza". You know? Like it's F I N E. It's low cal or whatever, but so not satisfying.
I'm here to tell you that YES, there are home-cooked meals that exist that taste both good and are healthy. Welcome to the world of LP's Harvest Bowls. This is inspired by a recipe that Gilbert's Chicken Sausages shared a few weeks ago...but with an LP twist of course. I asked if you guys would like to see me make this, and over 80% of you voted YES! (To the select few who said they don't like Fall, I'm sorry you feel that way...). I think the rest of us can agree, Fall is magical.
So strap on your brown boots, put on a felt hat, and get in a cozy sweater because we are getting all the warm and fuzzy feels with this one:

Oh, it just warms your soul. As always, there are tons of ways to substitute here. I am a fan of roasted Sweet Potatoes, but another Fall favorite is Squash.
