Instant Pot Minestrone Soup

Has anyone else been craving soup lately or is that just me? We've been getting some snow in Chicago, and there is truly nothing cozier to me than curling up on the couch with a warm bowl of homemade soup.
When it comes to soup, Minestrone is one of my all-time favorites. I grew up with my Dad making his version of homemade Minestrone on football Sundays (yes, it's to die for and yes I would have 3 bowls by the time the Bears game was over). Not only is it healthier compared to most other soups that are rich with creamy-goodness, but it tastes just as good when it's done right.

Now that I am an Instant Pot owner and lover, I was looking for an excuse to use it right away. After some very serious internet research on all things Instant Pot, I discovered that the true fans call themselves Pot Heads. That's right! I'm well on my way.
I stumbled across so many soup recipes on Pinterest, but I couldn't shake the need for that nostalgic Minestrone that I know and love. Being new to using the IP, I was worried that I might end up disappointed. However, I made sure to use similar ingredients based on my Dad's recipe and tweak it to fit to the IP cooking system. I encourage you to make decisions like this in the kitchen and go off the script. Trust your instinct and your taste buds if a recipe doesn't feel like a perfect fit for you. Learn where to modify, adjust and TRY to make meals your own. You won't be sorry.
This soup came together in a total of 30 minutes from start to finish. SOUP in 30 MINUTES?? Yep, it's a thing now. Highly recommend buying an Instant Pot if you don't have one already on Amazon here. We chopped veggies and opened cans for the first 15 minutes and cooked for the other 15.

I can't even get over how easy and delicious this was! I am giving this an LP Wellness Rating of an 8. I used Banza Chickpea Pasta (hop on board the train if you haven't already) and used a low-sodium Vegetable Broth to make this even healthier than it already is! I was able to freeze about half of the soup as the two of us were totally full after one bowl each. Needless to say, I am eager to pull it out soon!
