Copycat Panera Green Goddess Cobb Salad

Hello Fellow Food Lovers (FFLs)-


Welcome to my first ever Copycat Recipe! I am so excited to share this one with you all.


This is an easy, homemade version of Panera's Green Goddess Cobb Salad. Where are my Panera lovers at? Personally, I have a love/hate relationship with it. Everything I have had from there is delicious, but typically leaves me feeling hungry. Can anyone relate?


One of their menu items that I absolutely LOVE is the Green Goddess Cobb Salad. I love all Cobb Salads as it turns out...I mean bacon...in a salad? Sign me up.


Almost all the ingredients in this are identical to the Panera version with two exceptions.

  1. I did not pickle my Onions. I chopped and thinly diced raw, Red Onion. It was delicious and easier than the steps it takes to pickle, IMO.

  2. My dressing has 5 ingredients, and Panera's has 10! See below for more info...


One of my newest obsessions is all things Green Goddess: dressings, sauces, dips, etc. They are packed with healthy, tasty, and colorful ingredients. My homemade version can be found here: LP's 5 Ingredient Green Goddess Dressing and can be used for so many different recipes and meals. I highly suggest you try it! These days, store-bought dressings are packed with added sugars and preservatives that are not so good for our gut health. This dressing is 5 simple and fresh ingredients (Greek Yogurt, Parsley, Cilantro, Garlic, & Lemon). Your taste buds and belly will thank you later.


The dressing will take very minimal effort and time, so first things first, start by heating up the grill or pre-heat the oven to 425. In most of my recipes, you'll find that I typically bake my Chicken in the oven. I have perfected the cook time and temp of it by doing it this way, but I know a lot of people prefer the char on grilled meat. I added a little Salt, Pepper and Garlic Herb Seasoning to give the Chicken some added flavor. Grill/Bake Chicken until it reaches an internal temp of 165.


While the Chicken cooks, start on the Eggs. One of my favorite ever Amazon purchases is the Rapid Egg Cooker (linked here). If you're a meal prepper like me, this quick and easy egg cooking machine will change your life! Cook your eggs to your liking (I prefer a medium boil). Once the timer goes off on the Rapid Egg Cooker, let your Eggs rest in ice water.


Chop all your Veggies and Lettuce, and get a few strips of Bacon crisping on the stove-top. As a final step, blend your Green Goddess Dressing and peel Eggs.


While there are lots of ingredients in this salad, most of the prep work only requires chopping. I don't know about you all, but I am ready to commit to excellence in 2020 and start eating fresher meals. This was the perfect combination of healthy and filling. I am giving this an LP Wellness Rating of a 9.
