Chipotle Guacamole Burgers

Next Level Y'all.
Let me start by saying that living with an Irish guy means that I need to incorporate meat and potatoes into my meal rotation...like a lot. Mike had a taste for burgers on this particular night (SHOCKER!), but after a long summer of what felt like endless "burgers and dogs", I wanted to switch it up somehow. Compromise is a beautiful thing!
Let me tell ya-- this worked out great for both of us! Instead of American Cheese, we went with Colby Jack. Instead of Ketchup and Mustard, we went with Chipotle Ranch. Instead of French Fries, we went with Red Smash Potatoes. Oh boy, I could do a whole post about my love and affection for Red Smash Potatoes. This is my modification of a Pioneer Woman original recipe... without the whole family farm and without the all the butter.

My biggest recommendation when it comes to burgers is to INVEST IN YOUR BUNS. If not from me, then take a lesson from Sir Mix-a-Lot:

It is cheaper and easier to run to the bread aisle of the grocery store and grab the 8-pack of white Hamburger Buns. I encourage you to take a stroll to the bakery and pick out some fresh buns next time. #GameChanger
I am giving these Chipotle Guacamole Burgers an LP Wellness Rating of 4. Red meat and high calorie toppings make it harder to justify, but mix them in every once in a while to break up your routine. You'll be happy you did.
