I am a sucker for Mexican dinner night and this is how you do it RIGHT.


As a bit of background on my love for cooking, I have learned a lot from family. I've always enjoyed watching my loved ones share their tips and tricks in the kitchen, and this one is inspired by my Uncle Pat. When I moved into my own apartment in college and finally had to learn to cook for myself (who remembers how scary this was?!), he showed me how to make easy-peasy chicken enchiladas, and I have never been the same since. These will absolutely melt in your mouth & rock your world. After you make these once, you'll feel both accomplished as a home chef and be eager to make them again as soon as possible.


My recipe has been perfected and modified to my liking since, but the basis is all the same. Here's how to construct the most delicious chicken enchiladas:




Side Note for my followers if you're still reading:

I have included the "LP Wellness Scale" to the bottom of my recipes. This is a 1-10 scale (1 being not all that great for you at all and 10 being super-mega health and wellness freak status). However, what we deem as healthy is all relative and ever-changing. Wellness is so much more; How does eating this dish make you feel? How much time and energy does it require to cook? Is it satisfying and soul-warming? While my goal is to make dishes that help you pursue a healthy life, sometimes I use cheese. Sometimes I use red meat. Sometimes I use a fatty oil or go heavy on carbs. It happens, and life is about balance right?
